An observatory at the hotel 🔭? Yes please 🌗! This unique stay in Utah is Compass Rose Lodge in Huntsville, just under an hour from #SLC.
Many years ago this structure was a school house w/ deep history in the community. Jeff Perkins & his son, Dakota, renovated the building & added the grain tower as an ode to the agricultural history of #Huntsville. Many ideas were swirled around when deciding on the use of the tower but at the end the shape of it proved to be ideal for an observatory.
HALO observatory is open to the public for viewing & the other week the hotel hosted an eclipse party for everyone to enjoy the event together. The decor of the lodge is really fun drawing on antiques & vintage metal machinery. The wooden corner in my room is actually the wall of the observatory.
This geographic area for many years was also a popular trading post where Shoshone people came to trade so the tipi tents are a nod to the indigenous peoples of the area. The tipi can be rented for private events so during our visit we had a lovely dinner in this tent. The outside was rainy but the tipi was a warm contrast to the gloomy night.

Park City is home to Utah’s infamous High West Distillery 🥃
After the tour today we tasted a few of their drams. I was particularly drawn to the Double Rye & Campfire, a blend of bourbon, scotch, and rye whisky. Situated up in the hills w/ breathtaking views the distillery also has a great restaurant on site.

A quick search showed that Spiritual was the spot to be for cocktails in Saint George. Dimly lit, colourfully decorated w/ reclaimed furniture & vintage art the bar is a vibe.
On the table is Casablanca (gin, peach, aloe vera, clarified citrus) appropriately served over clear ice.

First activity on the Zion FAM trip w/ #WITSUtah - a dessert adventure! No filters, just one beautiful day ☺️
The ATV tour takes a few (3?) hours across the Red Plateau & through the red rock monuments just outside of Zion. It was stunning, amazing, a little bit scary & so exciting!
The last image, I e drive up to see this canyon from above & were all a bit shook about the idea of getting down there but it was a really fun ride & we got to see an owl’s nest 🦉

Peggys Cove is not just a tourism attraction it’s a slice of history & a place where people live. The new observation deck offers a great view on the lighthouse & Im told this corner of Nova Scotia is also great for storm watching 🌩️
Meanwhile the nearby cafe is where lobster is always in season & locals gather for chowder, tea & gossip ☺️

What do you know about Nova Scotia wine?
@aimeebourque, the lovely folks at Benjamin Bridge aaand Lightfoot & Wolfville Vineyards gave me a really great introduction yesterday. It is an exciting wine region w/ a lot of character & wonderful wine selections (mostly wine, especially sparkling). Here are a few key points:
Tidal Bay:
Is not a brand, it is a signature Nova Scotia blend, first wine appellation of the region (designated in 2012) regulated for quality & consistency. Many regional wineries produce Tidal Bay annually & from one to the other there will be a few signature winemaker differences but the general tasting notes are cool, crisp, lively and aromatic white wine.
Climate & terroir:
Cool climate w/ coastal breezes, mixture of sandstone & slate soil surrounded by hills & the world’s highest tides creates a microclimate ideal for white & sparkling wine 🍾. So naturally, sparkling wine is a must try when in the region 🥂
The views:
Even on this cold winter day (mid-March) the views were amazing. Rolling hills, a river a long the main road, distant views of the ocean & greenery in every direction. I cannot wait to see this valley in full colour.

Lightfoot & Wolfville Vineyards was our first stop where we enjoyed a delicious lunch w/ a tasting, me Sparkling, Aimée signature classics. This winery has a beautiful patio & an outdoor fireplace, I can only imagine how vibrant & breathtaking it must be on a warm day at sunset. The sparkling Rose is coming home with me 🥰.
Benjamin Bridge are perhaps the regions most beloved & well-known winery who have been innovating & developing the wine reputation of the valley for nearly 20 years. On this Sunday we lucked out & arrived just in time for a quiet hour of their seasonal cellar day allowing us to taste some rare bottles & chat through the appellation’s unique offerings.
